I am a snacker. Big time. My husband and I typically watch an episode of our favorite Netflix show while we wind down for the night, and how can you watch a show without snacking??
My usual culprits are popcorn, French fries, and ice cream. In order to keep things healthier, I've compiled a list of my favorite evening snacks, without packing on the calories.
1. Air popped popcorn: if your a major popcorn eater, invest in a good air popper. Buy kernels and pop your own. This allows you to pre-measure a serving size and control how much butter and salt are added (light to none!)
2. Sweet potato fries: home made sweet potato fries are in my top five favorite foods for sure! Just julienne to fry size, spritz with olive oil, and top with a light amount of garlic powder. Oven at 425 for 20 min and you've got home made deliciousness that will satisfy a sweet and salty craving!!
3. Zucchini Parmesan chips: thinly slice a zucchini and lay on a cookie sheet. Spritz with olive oil and top with 1 tbsp on grated Parmesan. Broil on high for 10 min.
4. Fruit smoothie: just as good as fro-yo or sherbet, combine 1 c. Light strawberry banana V8 splash, 1 c. Frozen berries, 1/2 non fat strawberry yogurt, and half a banana, blend to desired consistency Nd enjoy a creamy frozen treat!
5. Chocolate peanut butter shake: need a late night chocolate fix? Combine 1 c. Chocolate soy milk, 2 tbsp of peanut butter and 1 frozen banana. Blend to desired consistency. YUM!!!
